Ingredients
1kg Chicken pieces (legs, wings and drumsticks)
Piri Piri Seasoning
2 Jacket Potatoes
4 Cloves of Garlic
Thyme
Olive Oil
Preparation
Pre-Heat the oven to 160 degrees
Pour a generous glug of olive oil at the bottom of a roasting dish and add your chicken pieces.
Cut your potatoes into chunks and add to the dish, spreading evenly over the chicken to allow for tasty and crispy chips.
Take your Garlic cloves and crush them slightly with the side of a knife, allowing a mellow roasted Garlic flavour to seep over the potatoes.
Sprinkle a generous amount of Piri Piri seasoning over the contents, covering the Chicken and potatoes, finishing it off with a couple sprigs of Thyme.
Cook for 45 minutes to an hour or until your potatoes start to crisp up and the chieken reads 78 degrees.
