Piri Piri Chicken

About the Recipe


  • 1kg Chicken pieces (legs, wings and drumsticks)

  • Piri Piri Seasoning

  • 2 Jacket Potatoes

  • 4 Cloves of Garlic

  • Thyme

  • Olive Oil


  • Pre-Heat the oven to 160 degrees

  • Pour a generous glug of olive oil at the bottom of a roasting dish and add your chicken pieces.

  • Cut your potatoes into chunks and add to the dish, spreading evenly over the chicken to allow for tasty and crispy chips.

  • Take your Garlic cloves and crush them slightly with the side of a knife, allowing a mellow roasted Garlic flavour to seep over the potatoes.

  • Sprinkle a generous amount of Piri Piri seasoning over the contents, covering the Chicken and potatoes, finishing it off with a couple sprigs of Thyme.

  • Cook for 45 minutes to an hour or until your potatoes start to crisp up and the chieken reads 78 degrees.
